Given that series of hairpins, I think I'd want the skinniest fronts that still gave me some reasonable grip, as possible. Either that or power steering to counter the effort required to steer on fat tyres.

Not with a quick rack and fat tyres. I'll need more than a can of spinach to cope with that.

245 tires don´t hit the subframe? and 255 with less camber?

It will depends on tires...
My ku36 are ok in 245 40 17 with et 35 wheels
More will not be good .
