I'm confused. 255 will not fit without arch extenders. Arch extenders have no use without cut out of clam. Are you saying 255 will fit without cutting somehow?

You say that but my missus hasn't batted an eyelid about racing costs (partly because she doesn't know how expensive it is)

Thanks but I very much doubt I'll win anything, almost the entire field has been racing in the same class for years and so far I'm the only novice. I have two goals for the season, don't crash and don't come last. If I can achieve that I'll be well happy. I think I will be much more competitive (risky ) in the second season once I have some wheel to wheel experience under my belt

probably going to end up with a 215 front tire and a 255 rear, which means im going to putting even more pressure on the braking system which i already struggle with (wear ) so is it time i went 4 pots on the front and bigger discs on the rear

Regardless of number of pots and disc diameter, I think what you need is larger surface area pads IMO (if you want longevity).
Did you read up my brake conversion? I converted my fronts to some Porsche Brembo calipers (out of a Cayenne) with +80% pad area about 2 years ago. Wear on them is negligible now. Only cost about £400 for the whole project but you'd need to do a bit of simple machine work on lathe...
