Have you tried the more specialist insurers like Competition Car Insurance, Adrian Flux, Chris Knott ?
They're likely to be a lot more accomodating to modded cars.

I'm with cci for last 3 years. Best price each time for my vxt.
You could always re map it back to standard. .. would be a fantastic over the too modded future proof vxt

I know of a nice 2004 Turbo in Moonland, standard apart from a carbon 'V'. Has factory hard top, comfort pack and remote central locking. One owner for the last nine years who bought it with just 2,000 miles on the clock when it was less than a year old from the original owner.
Open to offers around £8,000.
Slightly high mileage at 160k, only just run in, but might have the record for highest mileage VX!
Comes with op-com, spare engine mount, new cambelt cover and few other odds and sods.
Unfortunately no finance available.
