Layer > New Adjustment Layer > Hue / Saturation and change the Saturation to -100 then use the paintbrush to erase. (Black to show colour, and white to erase colour)

Yes carbon, no, they went out of stock a few years ago. No new one's made.
Jimsan got it spot on many moons ago.
Maybe push Chrisvx220 a little more into a CF version of his Jimsan replica's :poke:
